Pecan Pie Triangles


1 package (18.25 ounce)
yellow cake mix
1⁄2 cup flour
1 stick of butter
3 eggs
1 1⁄2 cups dark corn syrup
1 1⁄2 cups packed light brown sugar
1 teaspoon vanilla extract
3 cups chopped pecans


  • Preheat oven to 350°F. Spray 13×9″ baking pan with cooking spray. Line pan with foil enough to hang over long sides by 1 1⁄2″, coat foil with spray.
  • Beat cake mix with flour, butter and 1 egg until stiff dough forms. Press dough into bottom and 1″ up the sides of pan. Bake 20 minutes or until starting to brown. Cool 10 minutes. Beat remaining eggs with syrup, sugar, and vanilla until combined. Stir in pecans, pour over crust.
  • Bake 20-25 minutes, until filling is set. Cool on rack 1 hour, using foil to remove from pan. Cut into 2″ squares. Cut each square diagonally.
